Iki Mata
Ika Mata is a raw fish Polynesian delicacy that tastes better when your fish is 'iki' fresh.
- 850gsm fish fillets
- 185gsm lemon juice
- 80gm diced tomatoes
- 70gm diced capsicum
- 5gm coriander
- 70gm onion / spring onion
- 120ml coconut cream
- 2gm finely chopped red chilli
- Salt & pepper
METHOD
Cut fish into 1cm pieces.
Place fish in lemon juice and toss to combine, cover with plastic wrap and place in the fridge for an hour.
Add tomatoes, capsicum, onion, coconut cream and chilli to marinated fish, stir gently to combine add in coriander and spring onion.
Taste and season with salt and pepper
